If you take good care of your wok it will last a long time. Food will not stick to it while you cook as long as you take the proper care of it. Good woks are made of iron. Iron, if not taken care of, will rust. The way you clean a wok is to not use any harsh abrasive material to clean it. You don't want to scratch the surface. Except when you first purchase a wok they are usually covered in a greasing substance for protection. This will need to be washed off before use.

Once your wok is cleaned you will need to dry it off good. Putting it on a burner on high heat will dry it completely. If a wok is not dried completely it will rust. Let it cool off then take a tbsp or tsp (if you have a smaller wok) of veg. oil or olive oil and a paper towel. Use the paper towel to coat the bottom and insides of the wok. This keeps the iron oiled. Many Chinese chefs also say to season the wok for storage. This means that after oiling the wok season it with salt, pepper.

How to Make Simple Chicken Fried Rice

One very easy quick and simple favorite recipe of my family's is chicken fried rice. The trick to chicken fried rice is to boil your rice but pull it out right before it is done. Then make sure the rice has time to completely cool so that it is dry again. Sticky rice has a tendency to get mushy so using short or long grain white rice is the best. Here is how to make chicken fried rice.

1 cup of uncooked rice
2 eggs
2 green onions
1 pkg. boneless, skinless, chicken breast
pepper
salt
garlic
red pepper flakes (only if you like a little heat)
2 tbsp. olive oil or veg.oil
1 large tbsp. of butter
soy sauce

Boil the rice until it is almost done (slightly crunchy). Let cool completely so that it is no longer wet. Cut the chicken into small chunks and cook in a separate pan with 1 tbsp. of oil. Spice the chicken with salt, pepper, and garlic to taste. In a wok or large pan, spread 1 tbsp. of oil around the wok add salt, pepper, and garlic to the oil. Turn it on medium high heat. Once heated slowly add the rice. If your heat is right, your rice will pop up off the bottom of the pan. Constantly turn the rice and add a large tbsp. of butter, pepper, salt, garlic and red pepper flakes to taste. After cooking and turning for a couple of minutes push the rice to the sides of the wok and scramble the eggs in the bottom of the wok. Once the eggs are cooked most of the way, you can mix the rice and the egg. Add the chicken, green onion, and around 2 tbsp. of soy sauce with the eggs and rice. Mix and heat for a couple of minutes then serve. Serves 4.

Making Cheap and Simple Spaghetti

I do not know any family that doesn't have spaghetti on the menu every once in awhile. My family likes spaghetti sauce from canned sauce and paste rather than from the jars of sauce. It is also cheaper. To make it more healthy use the wheat noodles and skip the meat. I'm sure it is even more healthy if you make your sauce from real tomatoes but I do not know how to do this. It probably is not so simple. One of these days I would like to make my own sauce and learn how to can tomatoes.

Easy and cheap Spaghetti:

1 bag spaghetti noodles (you will not need to use all of the noodles unless you have a large family)
2 8oz. cans of tomato sauce
1 small can of Italian style tomato paste
salt
pepper
garlic
oregano
garlic bread ( I like the garlic bread in the box in the frozen section of the grocery store)

Bring water to a boil. You may add a little salt to the water after it starts to boil. Add your noodles to the water. Boil your noodles until they are tender. When your noodles are done, drain and rinse them with cold water. It keeps the noodles from sticking to each other.

In another pan mix your tomato sauce and paste together and heat on medium until good and hot. Add salt, pepper, garlic and oregano to taste. We like more pepper to add a little spice to the sauce. Some people add a little sugar to the spaghetti sauce. Just add the spices to your taste. It doesn't have to be perfect. Just needs to be what you and your family like.

You may cook ground beef (be sure to drain the grease) and add to the sauce or you may add Italian sausage. Either mix the noodles with the sauce or poor the sauce over the noodles. You may also add mushrooms or any other ingredient your family likes in their spaghetti. That is the thing about simple cooking, you can take the basic spaghetti and make it your own. I am here to help give you the simple basics.

Simple Cooking with Easy Recipes like Beef and Noodles

I am the average mom who likes to cook. I would love to have the time and money to try new exotic recipes everyday, however, I just don't have the luxury. When I am tired and need to fix my family dinner, cooking can be more of a chore than enjoyable, especially when you are talking about 2 to 3 meals a day 7 days a week. I have found that if you can start a meal earlier in the day and slow cook that meal it makes it so much more enjoyable.

I am going to try to give you some easy recipes. Not all of the recipes will be for slow cooking but I will try to make them for simple cooking. My style of cooking is more in line with grandma's old recipes. Not exactly healthy cooking. Here is an easy recipe for Beef and Noodles:

Beef and Noodles:

1 pkg. of wide egg noodles
pkg. of stew meat
1 stick of butter or margarine
salt
pepper
1 pkg. of dinner rolls

Cut your stew meat into smaller chunks and add to a pot of water. Add a tablespoon of salt and pepper and cover. Simmer for 2 to 3 hours on a low temp. About 30 to 45 minutes before you want dinner to be served add the egg noodles on a simmer temp. Keep an eye on the egg noodles, you want them cooked but firm. If you cook them on a high temp. too long they will get mushy. Next drain your beef and noodle mixture but keep the liquid in a separate bowl. Add the beef and noodles with a stick of butter in a bowl and mix. Take the liquid and drain the water so that there is the spices with a little liquid left in the bottom.
